A Delicate Balance

A birch tree yields more sap than a maple tree over a shorter period of time.  As a matter of fact, each tree produces up to five litres of sap per day for 10 to 20 days.  A large amount of birch sap must be collected, because it takes 100 to 120 litres of sap to make just one litre of syrup.

From Sap to Syrup

Sap is collected in tubes so that it does not come into contact with water or the ambient air.  It is then filtered to remove all impurities. Since sap quality deteriorates rapidly, sap must be collected and made into syrup every day. 

During the long and delicate evaporation process, the temperature must be controlled so that all the flavour is retained and the various active ingredients are not altered.  Nothing is added so the syrup remains as pure as nature intended!

At long last, the syrup is carefully bottled at our facilities to preserve its taste quality.
